In Italy novelties take some effort. The effort of looking for them, and the effort in spreading them. Nowadays, creating innovative projects in Italy requires the same time and perseverance it takes to whisk egg yolks and sugar to make a perfect zabaglione. Aiming at visualizing this effort through a collective cooking action, food is prepared using traditional long-forgotten kitchen utensils, like egg beaters, whisks and rolling pins, and working hard to get to the hoped-for outcome.
